Taste The Rainbow

When I was a kid my mama always told me in every meal to "eat the rainbow". She told me this at an age when adding iceberg lettuce was the compromise we came to when she told me I had to add veggies to my sandwich. Thankfully now my tastebuds have matured to liking more than just watery, nutrient-less lettuce. And even though Skittles owns "taste the rainbow" we decided to borrow it and give it a healthy spin! Enjoy this Rainbow Bowl!




1 red pepper, thinly sliced

1 large cucumber, spiralized or thinly sliced

1 large carrot, peeled into ribbons

1 cup halved cherry tomatoes, any color or variety

6 cups loose packed baby kale

2 cups shredded purple cabbage

8 to 10 basil leaves, chopped

2 scallions, chopped

½ cup edamame or protein of choice

8 ounces cooked brown rice noodles

Chop up all your veggies and prepare the brown rice noodles as directed on back of package. Then mix them all in a large bowl


For the dressing we made an Almond Ginger Dressing. But if you're short on time Goddess Dressing would be really yummy with this too


¼ cup almond or cashew butter

¼ cup fresh lime juice

1½ tablespoons tamari, plus more to taste

1 garlic clove, minced

½ teaspoon minced ginger

⅓ cup Almond Milk


For the dressing combine the almond butter, lime juice, tamari, ginger and garlic in a small bowl and whisk until smooth. Then add the Almond milk and whisk to combine.
