The Ultimate Lemon Bars

Honestly y'all, is there anything cheerier than bright yellow lemons? I know it's crazy but just seeing a bowl of lemons makes me happy; turn those lemons into lemon bars and we've reached a whole other level!

 

To make these sunny little treats you'll need:

 

For the crust:

 

1 Stick of unsalted butter

3/4 cup of all purpose flour

6 Tbsp almond flour

1/4 cup confectioners sugar

1/2 tsp salt

 

For the filling:

 

3 eggs

3/4 cup freshly squeezed lemon juice

3/4 cup granulated sugar

1/4 cup all purpose flour

pint of salt

zest of 2 lemons

 

Directions:

Preheat oven to 350 degrees. Butter a 6" x 12" baking pan and line base and sides with parchment paper, extend the paper an inch over the edge, this will help you lift the bars from the pan. In a stand up mixer fitted with the paddle attachment, beat butter, confectioners sugar, all purpose flour, almond flour, and salt on medium speed until the mixture comes together. Press the dough evenly into pan. Bake for 20-22 minutes on the middle rack of the oven until edges are golden brown. While the dough is baking, prepare the filling. In a large mixing bowl whisk the eggs with a pinch of salt. Add the granulated sugar, lemon juice, and all purpose flour and whisk until combined. Strain the egg mixture to remove any lumps then whisk in lemon zest. Pour egg mixture over the crust and bake for another 20 mins until edges are set but the middle is still jiggly. Let the bars cool completely in the pan on a wire rack then cover and refrigerate until ready to serve
