Watermelon Popsicles

Happy Friday y'all!! This past week here in LA has felt like summer and we have been SO happy about it!! But it was definitely a reminder of just how hot it gets around these parts and how heavily we rely on cool, healthy, and refreshing treats to get us through those scorchers. So I came up with the perfect treat that fills all those requirements. These watermelon popsicles are so yummy and there is zero sugar added!

 

All you need is:

 

3 cups of watermelon diced

1/2 cup of coconut milk

1 cup of kiwi diced

A dash of chia seeds

(your portions may vary depending on which popsicle molds you have. I have THIS one and I love it!) 

 

Start by blending your watermelon until it's smooth. Then set it aside in a bowl while you blend your kiwi until it is smooth. That's all the "hard work" by the way!

 

 

Then fill your your popsicle molds 2/3 of the way full with the watermelon and stir in the chia seeds and freeze. Now, when I make popsicles out of liquid juices, 30 minutes is usually enough but I found that the watermelon took a little bit longer to fully freeze, about an hour. Once your watermelon layer is frozen, pour you coconut milk layer on top being sure to leave enough room for the kiwi. Let your coconut milk layer freeze for another hour then pour on your last kiwi layer. Then cover your popsicle molds. If you use the same molds I use it comes with a thin metal cover, if not cover with tin foil and let it freeze over night. And that's it!! When you're ready to eat your popsicles run your popsicle mold under warm water to loosen it up and bit and they should pop right out!

If you're making these for a party, a great way to set them out for everyone is in a large tub of ice. It keeps them from melting but makes it super easy for everyone to grab one and enjoy!
