Pineapple Sherbet

Once summertime hits and those temps start rising we're always looking for yummy and refreshing ways to cool off. And when I went to the store the other day the pineapples were so ripe and smelled so good I knew I wanted to make a frozen treat with them. That's where I found the recipe for pineapple sherbet and it couldn't be easier!

 

All you'll need is 4 cups of pineapple cubed and 1/2 cup of full fat coconut milk. I've seen other recipes call for sugar, honey, or agave but I feel like pineapple is sweet enough on it's own. If you want it sweeter though you can always add that.

Blend your pineapple and coconut milk together in a blender or food processor and then divide it into ice cube trays and let it freeze completely. Once it frozen put it back into the blender and it will give you that dreamy creamy texture. Then scoop it out and serve! We garnished ours with a pineapple slice and a leaf from the pineapple. Now dig in. See, told ya it was simple!
