St. Patricks Day is this Sunday and I know that St Paddy's Day and healthy don't usually go in the same sentence but we're changing things up over here since we don't really do the green beer thing. One of my favorite things is finding a food that isn't good for you and turning it into a healthy nutritious meal. Thankfully with the world wide web so many recipes are right at your fingers tips so lets dive on in shall we?
Let's start with those yummy looking Matcha Green Tea Pancakes from Killing Thyme. You can get your pancake fix without the heavy gut afterwards!!
Next up is the classic green juice, this one looks especially appetizing because it is made with cucumber and grapefruit which are both known for giving you that healthy glow from within.
Who doesn't love a grilled cheese sandwich?? This one adds green tomatoes, spinach, and avocados to the mix and makes it that much more delicious. The only thing I would change is I would use vegan cheese (I've been making grilled cheeses with vegan cheese and my fiancé who isn't even vegan has been loving them even more!)
Once I discovered Kelly's recipe for the "fab 4" it's the only way I make smoothies now. The whole idea is you make sure each recipe contains fiber, protein, fat, and greens, what you choose to put in it is up to you but this recipe looks so good to me, in fact, I think I'll make it this morning!
Last but not least is our Avocado Margarita pops, okay, so they're not really healthy per se but at least you're getting some veggies in there ;)
I hope y'all have a happy and healhty St. Patricks Day weekend!
